Chouquettes : THE Favorite Snack of French Kids after School

This "chouquettes" recipe is a favorite among kids in France, often enjoyed after school, for breakfast, or as a snack (goûter), and is sold in most French bakeries.

Ingredients:

  • 1 pinch of salt
  • 125 g sifted flour
  • 100 g butter
  • 0.25 L (250 mL) water
  • 4 eggs + 1 egg for the egg wash (to give the puffs a golden finish)
  • Pearl sugar for topping

Recipe:

STEP 1
Preheat the oven to 428°F (220°C).

STEP 2
In a saucepan, bring the water, butter, and salt to a boil. Once boiling, remove the saucepan from the heat and add the flour all at once. Stir quickly, then cook the mixture on low heat with a wooden spoon until it separates from the sides and bottom of the saucepan. Remove from heat, and add the eggs one by one, mixing well with the wooden spoon after each addition. The dough should be soft but hold together in one lump.

STEP 3
Form small heaps of dough and place them on a baking sheet lined with parchment paper. Brush the top of each with the extra beaten egg and sprinkle with pearl sugar.

STEP 4
Bake for about 25 minutes at 430°F (220°C) until golden and puffed.
