Raspberry Jam Shortbread Cookies: A fun and easy baking project for kids

This recipe for jam-filled shortbread cookies is perfect for snack time and a delightful activity for kids.

Ingredients for 20 small shortbreads:

- Powdered sugar for finishing

- 100g granulated sugar

- 100g softened butter

- 250g flour

- 1 egg

- A drop of vanilla extract

- 50g almound flour

- Red fruit jam (raspberry or strawberry)

 

STEP 1: Mix the softened butter with granulated sugar and vanilla extract.

STEP 2: Work the mixture well until it becomes a whitish cream, then add the egg.

STEP 3: Combine everything, then add the flour and ground almonds.

STEP 4: Work the dough well until it forms a ball. Place it in a container and let it chill in the refrigerator for at least 30 minutes.

STEP 5: Flour the work surface and roll out the dough with a rolling pin. It should be neither too thin nor too thick.

STEP 6: Cut out fairly large rounds with a cookie cutter.

STEP 7: In half of the obtained cookies, make a hole in the center.

STEP 8: Bake in the oven for 10 to 15 minutes at 150°C (305°F); they should have a light color.

STEP 9: Let them cool, then spread jam on the solid shortbreads.

STEP 10: Cover with the cookies with a hole in the center, then sprinkle with powdered sugar.
