Featuring a caramelized top that teeters on the edge of being burnt and a delightfully jiggly custardy center, Basque Cheesecake is a sensational amalgamation of textures and flavors effortlessly crafted from just a few ingredients. Pair it with a fruit coulis, fresh fruit toppings, or a drizzle of salted caramel sauce for an extra layer of delight.
Ingredients (for 8 people) :
- 600g cream cheese (Philadelphia or Mascarpone)
- 6 eggs
- 40cl heavy cream
- 160g sugar
- 20g flour
- Vanilla extract
Equipment:
- 1 cake ring or casserole or ovenproof dish with a diameter of 24cm
- Parchment paper
Instructions:
- Preheat the oven to 200°C with convection heat.
- Line a mold with high sides with parchment paper. Cross two sheets of parchment paper to fully contain the cheesecake as it rises during baking.
- Blend all the ingredients together.
- Pour the mixture into the cake ring (or mold, or casserole).
- Bake for 1 hour.
- Allow to cool for 1 hour at room temperature, then chill for a minimum of 2 hours in the refrigerator before removing the parchment paper and enjoying.
