THE Burnt Basque Cheesecake Recipe that will blow your mind

Featuring a caramelized top that teeters on the edge of being burnt and a delightfully jiggly custardy center, Basque Cheesecake is a sensational amalgamation of textures and flavors effortlessly crafted from just a few ingredients. Pair it with a fruit coulis, fresh fruit toppings, or a drizzle of salted caramel sauce for an extra layer of delight.

 

Ingredients (for 8 people) :

  • 600g cream cheese (Philadelphia or Mascarpone)
  • 6 eggs
  • 40cl heavy cream
  • 160g sugar
  • 20g flour
  • Vanilla extract

Equipment:

  • 1 cake ring or casserole or ovenproof dish with a diameter of 24cm
  • Parchment paper

Instructions:

  1. Preheat the oven to 200°C with convection heat.
  2. Line a mold with high sides with parchment paper. Cross two sheets of parchment paper to fully contain the cheesecake as it rises during baking.
  3. Blend all the ingredients together.
  4. Pour the mixture into the cake ring (or mold, or casserole).
  5. Bake for 1 hour.
  6. Allow to cool for 1 hour at room temperature, then chill for a minimum of 2 hours in the refrigerator before removing the parchment paper and enjoying.
