Clafoutis is a French summer dessert, traditionally made with cherries but it works very well with other fruits like peach, apple, pear, or apricot.
1. Prepare the ingredients (recipe for 4 people):
- 6 peaches
- 50 g of vanilla sugar
- 50 g of salted butter
- 3 eggs
- 40 g of cane sugar
- 80 g of flour
- 30 cl of milk
- 1 tablespoon of powdered sugar
- Almond slices (for decor)
2. Peel the peaches, cut them in half, and remove the pits. Cut the peach halves into quarters and place them in a bowl, sprinkling them with vanilla sugar. Set aside.
3. Generously butter a pie dish of approximately 24 cm in diameter
or 4 individual dishes if you make individual portions
4. Preheat the oven to 180°C (350°F). In a bowl, whisk the eggs with the light brown sugar until the mixture becomes pale. Stir in the flour, then add the milk, mixing until you have a smooth batter.
5. Arrange the peaches at the bottom of the pie dish and pour the batter over them. Sprinkle with the remaining butter, cut into thin slices, add almond slices, and bake for approximately 35 minutes.
6. When it comes out of the oven, dust it with powdered sugar. Serve warm.
