THE Hazelnut and Raspberry Financiers Recipe that will satisfy all your small and big summer appetites

Introducing our Hazelnut and Raspberry Financiers Recipe – a delightful addition to elevate your summer tea parties with a burst of color and flavor.

Ingredients:

  • 67g Hazelnut Powder
  • 181g Icing Sugar
  • 74g Flour
  • 2g Baking Powder
  • 1.5g Fine Salt
  • 168g Egg Whites
  • 16g Honey
  • 105g Butter
  • 40g Fresh Raspberries
  • 20g Whole Hazelnuts or chopped almonds (for decor)

Preparation:

Step 1: Prepare browned butter.

Step 2: Roast the hazelnut powder at 140°C (284°F) for 20 minutes.

Step 3: Mix the cooled hazelnut powder with icing sugar, flour, salt, and baking powder. Add tempered egg whites.

Step 4: Add honey, then finish with the browned butter.

Step 5: Pipe 45g into financier molds and place 3 to 4 whole raspberries.

Step 6: Bake at 180°C (356°F) for 15 minutes. Garnish with fresh raspberries and some crushed, toasted hazelnuts or chopped almonds (for decor).
